There’s nothing worse than not knowing what to eat when your either slightly hungry, too poor for your own good or wanting something YUM & healthy.. I’ve got you covered with these easy, cheap & healthy reciepes.. enjoy!

BANANA SMOOTHIE.. the perfect on the go breakfast when you’re running late for work!
What you’ll need;
1 x Banana
1 x Scoop of vanilla Protein Powder
1- 1 1/2 cup of Almond or Coconut milk

What you’ll need to do;

  1. Combine all ingredients in blender & serve

 

RICOTTA & AVO CRACKERS..Cheap & super easy for lunch!
What you’ll need;
1 x Avo
2-3 tbsp of Ricotta
1 x Lemon
Small handful of Cherry tomatoes
Small handful of Rocket
Salt & pepper
Wholemeal crackers

What you’ll need to do;

  1. Mush & combine avo, ricotta, lemon, salt & pepper in bowl
  2. Smear mixture onto crackers
  3. Cut cherry tomatoes in half & add with rocket on top of crackers

 

COCONUT FISH TACOS dinner for 1… plus leftovers for lunch tomorrow!
What you’ll need;
1 x Basa fillet (or your choice of plain fish) – I like bass because its so cheap & doesn’t have a strong fishy taste
1 x Egg
1 x half Sweet Potato
Half a cup or so of Bread Crumbs
Half a cup or so of Shredded Coconut
Soft or hard Tacos – up to you!
¼ cup or so of Coconut Flour
1 x Lime or Lemon
Enough Coconut Oil to cover pan
Enough Raw Rice malt or Honey to drizzle over Sweet Potato
Your choice of Slaw – I like combining cherry tomatoes, avo, red onion, corn, shredded cabbage, capsicum together with a little bit of coleslaw dressing

What you’ll need to do;

  1. Preheat the oven to 180 degrees
  2. Line a baking tray with baking paper & put aside
  3. Cut the sweet potato into small cubes – the smaller, the quicker they cook!
  4. Drizzle sweet potato cubes with rice malt & put in the oven. Allow around 15/20 minutes to cook – you’re wanting soft baked sweet potato cubes
  5. Whisk 1 egg & put aside
  6. Combine bread crumbs & shredded coconut on plate and put aside
  7. Pour coconut flour on small plate & put aside
  8. Cut the fish filet lengthways and then cut each strip into 2 – creating a ‘nugget-like’ shape
  9. So now for each fish nugget your going to roll in flour to cover all surfaces, dunk in the whisked egg to cover all surfaces & then roll in the shredded coconut and breadcrumbs mixture.. then place on a separate plate ready to cook!
  10. Heat your pan to ¾ heat & pour enough coconut oil in pan to cover bottom with about 1mm of depth.
  11. Once pan and oil is heated, place in fish nuggets.. Your wanting a golden brown hard surface & then flip to cook other side.
  12. Whilst cooking, place paper towel on plate & set aside next to pan – once fish nuggets are cooked, transfer to paper towel to try excess oil.
  13. In the meantime, whilst the fish nuggets are cooking prep your slaw. Cut up all ingredients & combine. Around about nowish your sweet potato should be done. Once cooked, mix sweet potato in with slaw mixture.
  14. Once your fish nuggets are near to complete, it’s time to cook your tacos.. if you’ve chosen hard tacos, place on oven tray & cook to packet instructions (usually around 3 minutes). If you’ve chosen soft tacos, place on small plate & give them a quick zap in the microwave until cooked how you like them (usually 10-15 seconds until hot)
  15. Once all fish nuggets are cooked & transferred to paper towel plate, place extra paper towel over the top and lightly press down on all fish nuggets – to dry excess oil.
  16. Now you have some amazing coconut fish tacos to indulge in! Pack your taco with slaw mixture, coconut fish & drizzle with lime.. and bonapeptie!
