Get Fresh For Spring

Spring has finally arrived and now that the season has changed, so has our appetite! Things are heating up and I don’t know about you but I no longer want those heavy hearty meals so I’m swapping them for light tasty salads. It’s always go, go, go at Mishkah HQ, so lunch needs to be quick and easy. My lunchtime treat I’m currently diggin’ is Roast Beef Lettuce Cups, and it’s so simple. Keep in mind, if you have different tastes, you can always tailor it to your buds.

WHAT YOU’LL NEED:

1 X Pack of Cos Lettuce
1 X Handful of Sliced Roast Beef
1 X Avocado
1 X Tomato
1 X Red Onion
1 X Sml Tin of Corn Kernels
Cheese

WHAT TO DO:

– Peel off the amount of lettuce leaves you’d like to make the cups.
– Slice up all the fruit and vegetables and place them evenly onto the lettuce leaves.
– Add the roast beef on top and cheese.

And there you have it my friends, the most quickly prepared lunch that is filling, delicious and healthy for you. Even add some salt and pepper or a little bit of dressing if you’re feeling cheeky. Enjoy!
